Fall is here! The season for pumpkin patches, corn mazes,
and apple orchards is upon us! If you’re like me and always pick way too many
apples (I just can’t pass up a $16 bushel of apples!), here’s a great apple
bread recipe from my grandma to help you use them up! Go Owls!
Grandma Esterguard’s Apple Bread
Ingredients
1 cup oil (vegetable or canola is fine)
3 eggs
2 cups sugar
1 tsp. vanilla
3 cups apples, diced
3 cups all-purpose flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts (optional)
Instructions
Combine and set aside the oil, eggs, sugar and vanilla.
Combine flour, cinnamon, baking soda, and salt. Add dry ingredients to the oil
mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans or 3 foil
loaf pans for 90 minutes at 300°F. Sprinkle tops with sugar, if desired.
